Old Delhi khameeri roti, naturally fermented and pillowy. Rolled, rested and flame-kissed — the real thing. Pile in a basket lined with cloth and let everyone grab.

Ingredients

  • Yogurt2 cups, whisked
  • Saltto taste
  • Ghee3 tbsp
  • All-Purpose Flour2 cups
  • Sugar1 tsp

Instructions

    Mix the flour(s) with salt, then add water slowly, kneading 8-10 minutes to a soft, springy dough that springs back when poked.

    Cover and rest; use this time to make the filling or get the pan hot.

    Shape each ball, flatten, and either roll plain or enclose a spoonful of filling and roll with the seam down.

    Cook the first side dry, the second side with ghee, and finish directly on the flame for the puff.

    Brush with butter or ghee, stack in a cloth to keep steam-soft, and serve immediately.

Chef's tip

The puff comes from steam; don't poke holes with a fork.
