
Radha Ballavi
Bengali daal puri stuffed with spiced lentils, festival fried bread. Soft-centred, blistered and buttered; bread as daily ritual. Serve with any curry, dal or pickle on the table.

Instructions

Bring the dough together with lukewarm water, then knead hard — soft dough makes soft bread, no shortcuts.

Let it rest in a warm spot; the dough should look smoother and feel like an earlobe when ready.

Shape each ball, flatten, and either roll plain or enclose a spoonful of filling and roll with the seam down.

Slap onto the hot tawa; when dark spots appear, flip and press at the edges with a cloth till it balloons.

Brush with butter or ghee, stack in a cloth to keep steam-soft, and serve immediately.

Don't crowd the pan; steam is the enemy of the browning that builds flavour.
