
Gud Wali Roti
Jaggery-smeared gud roti, childhood breakfast of North India. Flour, water, heat and hands — the oldest bread tradition on earth. Best with a rich gravy and sliced raw onions.
Ingredients
- Salt1 tsp
- Ghee3 tbsp
- Wheat Flour3 cups
- Jaggery3/4 cup, grated
Instructions

Combine flour, salt and water into a shaggy mass, then knead till smooth and supple; rest covered 20 minutes.

Rest the dough, covered with a damp cloth, for at least 30 minutes — gluten relaxes, rolling gets easier.

Divide into equal balls, then roll — plain, or stuffed and sealed like little parcels before rolling gently.

Cook on a hot tawa till brown blisters form, flip, then finish over an open flame (or in the pan with ghee) till it puffs.

Brush with butter or ghee, stack in a cloth to keep steam-soft, and serve immediately.
Chef's tip
Fresh spices make the dish — if yours smell of nothing, the dish will taste of nothing.
