
Chaler Payesh
Bengali rice payesh, gobindobhog grains in date-palm jaggery milk. Ghee, sugar, patience — the three ingredients in every Indian celebration. Best after resting an hour; the flavours settle.
Ingredients
- Salta pinch

- Basmati Rice2 cups, rinsed and soaked 20 minutes
- Milk1 litre
- Sugarto taste
- Jaggery3/4 cup, grated
- Green Cardamom1 tsp

Measure everything before lighting the flame; there is no pause button mid-cook.

Combine the basmati rice with the milk in a heavy-bottomed pan and begin cooking over medium heat, stirring constantly.

Keep going until the mass pulls away from the pan and glistens; the colour should deepen a shade.

Season the mix with the jaggery and green cardamom, reserving some nuts for the top.

Tip into a greased tray, level the top, sprinkle nuts, and let it set before cutting into diamonds.
Chef's tip
If the masala sticks, add water a tablespoon at a time rather than drowning the dish.
