
Pudina Pyaz Paratha
Mint paratha, green-flecked and ghee-brushed. Soft-centred, blistered and buttered; bread as daily ritual. Serve with any curry, dal or pickle on the table.
Ingredients
- Saltto taste
- Green Chili2
- Ghee3 tbsp
- Mint Leaves1/4 cup
- Wheat Flour3 cups
Instructions

Mix the flour(s) with salt, then add water slowly, kneading 8-10 minutes to a soft, springy dough that springs back when poked.

Rest the dough, covered with a damp cloth, for at least 30 minutes — gluten relaxes, rolling gets easier.

Divide into equal balls, then roll — plain, or stuffed and sealed like little parcels before rolling gently.

Cook the first side dry, the second side with ghee, and finish directly on the flame for the puff.

Finish with a slick of butter and eat while the first one is still steaming.
Chef's tip
Fresh spices make the dish — if yours smell of nothing, the dish will taste of nothing.
