Thepla
Gujarati methi thepla, the travel bread that survives week-long journeys. Soft-centred, blistered and buttered; bread as daily ritual. Best with a rich gravy and sliced raw onions.
Ingredients
- Yogurt2 cups, whisked
- Saltto taste
- Ghee2 tbsp
- Wheat Flour3 cups
- Sesame Seeds1 tsp
- Jaggery3/4 cup, grated
Instructions

Combine flour, salt and water into a shaggy mass, then knead till smooth and supple; rest covered 20 minutes.

Cover and rest; use this time to make the filling or get the pan hot.

Divide into equal balls, then roll — plain, or stuffed and sealed like little parcels before rolling gently.

Cook on a hot tawa till brown blisters form, flip, then finish over an open flame (or in the pan with ghee) till it puffs.

Finish with a slick of butter and eat while the first one is still steaming.
Chef's tip
Stuffed breads need gentle rolling — burst filling is heartbreak.
