
Til Wali Roti
Sesame roti, nutty-crisp with winter jaggery. Flour, water, heat and hands — the oldest bread tradition on earth. Serve with any curry, dal or pickle on the table.
Ingredients
- Saltto taste
- Ghee3 tbsp
- Wheat Flour3 cups
- Sesame Seeds1 tsp
- Jaggery3/4 cup, grated
Instructions

Combine flour, salt and water into a shaggy mass, then knead till smooth and supple; rest covered 20 minutes.

Rest the dough, covered with a damp cloth, for at least 30 minutes — gluten relaxes, rolling gets easier.

Portion the dough, stuff and pinch the seams closed, then roll with a feather touch so nothing bursts.

Cook the first side dry, the second side with ghee, and finish directly on the flame for the puff.

Finish with a slick of butter and eat while the first one is still steaming.
Chef's tip
A final squeeze of lemon or lime right before serving wakes up every other flavour.
