
Zarda
Awadhi zarda, saffron-sweet rice with raisins and khoya for weddings. Festival sweetness, made the slow way. Plate in petit-four pieces with tea or as prasad.
Ingredients
- Salta pinch
- Ghee3 tbsp
- Basmati Rice2 cups, rinsed and soaked 20 minutes
- Saffrona pinch, soaked in warm milk
- Sugar1 tsp
- Green Cardamom4, ground

- Golden Raisins2 tbsp
Instructions

Measure everything before lighting the flame; there is no pause button mid-cook.

Start the base: the basmati rice and sugar together in a thick pan, stirring so nothing catches.

Stir through the long middle stage until the mixture looks cohesive and smells toasty and rich.

Add the saffron, cardamom and any nuts or saffron; fold through and cook two minutes more.

Spread or shape while warm, garnish with the reserved nuts, cool completely, then cut or serve as it sets.
Chef's tip
Ghee should be fragrant but never browned past golden.
