
Qubani Ka Meetha
Hyderabadi apricot qubani, dark-sweet stewed fruit with cream. Ghee, sugar, patience — the three ingredients in every Indian celebration. Serve at room temperature, cut small — sweetness needs no size.
Ingredients
- Heavy Cream1/4 cup
- Salta pinch
- Ghee3 tbsp
- Sugar1 tsp
- Almonds1/4 cup, blanched and slivered
- Apricots500 g
- Green Cardamom4, ground
Instructions

Set out every ingredient measured and ready; Indian sweets move fast once the heat is on.

Combine the apricots with the sugar in a heavy-bottomed pan and begin cooking over medium heat, stirring constantly.

Cook, stirring, until the mixture thickens and leaves the sides of the pan — 15 to 25 minutes of honest work.

Stir in the almonds with the cardamom; the aroma should bloom immediately.

Tip into a greased tray, level the top, sprinkle nuts, and let it set before cutting into diamonds.
Chef's tip
Don't crowd the pan; steam is the enemy of the browning that builds flavour.
