Gajak, paper-thin sesame brittle from Morena's winter markets. The taste of every good news day in an Indian household. Best after resting an hour; the flavours settle.
Ingredients

- Sesame Seeds500 g
- Jaggery3/4 cup, grated
- Green Cardamom1 tsp

Prep first: nuts chopped, pans greased, trays ready — this recipe rewards organization.

Combine the sesame seeds with the jaggery in a heavy-bottomed pan and begin cooking over medium heat, stirring constantly.

Keep going until the mass pulls away from the pan and glistens; the colour should deepen a shade.

Season the mix with the ghee and green cardamom, reserving some nuts for the top.

Tip into a greased tray, level the top, sprinkle nuts, and let it set before cutting into diamonds.
