Palli Podi
Andhra peanut podi, the gunpowder that turns rice into a meal. Fresh-ground and unapologetically loud. Spoon alongside breakfast or stir through hot rice with ghee.
Ingredients
- Saltto taste
- Garlic6 cloves
- Mustard Seeds1 tsp
- Curry Leaves1 sprig
- Dried Red Chilies1 tsp
- Asafoetidaa pinch
- Peanuts1/2 cup, roasted
- Tamarind Paste2 tbsp
- Coconut Oil1 tbsp
Instructions
- 1
Chop, measure and line up; the cooking part is over before the radio finishes a song.
- 2
If the recipe roasts, dry-roast the dried red chilies till aromatic; if fresh, skip straight to grinding.
- 3
Grind the peanuts with the dried red chilies, tamarind, green chilies and salt to a texture you like — smooth or rustic.
- 4
Balance the three notes: more tamarind for sour, more chili for bite, salt to make both sing.
- 5
Pour the crackling tadka over the chutney and leave it sitting on top like a crown.
Chef's tip
The tempering isn't optional — it is the aroma layer.
