
Gud Peanut Chikki
Peanut chikki, school-gate energy bar since forever. The taste of every good news day in an Indian household. Serve at room temperature, cut small — sweetness needs no size.

Put the peanuts and jaggery on a steady medium flame and commit to stirring — sweets test your patience.

Keep going until the mass pulls away from the pan and glistens; the colour should deepen a shade.

Add the ghee, cardamom and any nuts or saffron; fold through and cook two minutes more.

Shape or slice once it has cooled enough to handle; it firms up as it rests.
Chef's tip
If the masala sticks, add water a tablespoon at a time rather than drowning the dish.
