Garlic pickle in mustard oil, winter immunity with attitude. Fresh-ground and unapologetically loud. Serve with idli, dosa, rice or anything that needs waking up.

Ingredients

  • Saltto taste
  • Garlic6 cloves
  • Fenugreek Seeds1 tsp
  • Mustard Seeds1 tsp
  • Curry Leaves1 sprig
  • Dried Red Chilies2
  • Asafoetidaa pinch
  • Tamarind Paste1 tbsp
  • Red Chili Powder1 tsp
  • Mustard Oil1 tsp
  • Coconut Oil1 tbsp

Instructions

    Chop, measure and line up; the cooking part is over before the radio finishes a song.

    Toast the red chili powder lightly for depth, or keep it raw for brightness — both are correct.

    Pound or blend the garlic with chilies, tamarind and salt; the stone grinder texture is worth chasing.

    Check the seasoning with a plain spoonful of rice; adjust till it pops.

    Finish with a sizzling tempering: mustard seeds, curry leaves and dried red chilies poured over the top; stir in only at serving.
