
Nimbu Ka Achar
Lemon pickle, salt-cured sunshine in a jar. Fresh-ground and unapologetically loud. Keeps three days refrigerated; tempering on top keeps it fresher.
Ingredients

- Fenugreek Seeds1 tsp
- Mustard Seeds1 tsp
- Curry Leaves1 sprig
- Dried Red Chilies2
- Asafoetidaa pinch
- Lemon1
- Tamarind Paste1 tbsp
- Red Chili Powder1 tsp
- Coconut Oil1 tbsp

Get everything ready: fresh coconut or the lemon prepped, spices within reach — chutney takes minutes.

Toast the salt lightly for depth, or keep it raw for brightness — both are correct.

Pound or blend the lemon with chilies, tamarind and salt; the stone grinder texture is worth chasing.

Taste and adjust — salt, sour, heat; chutney should be slightly louder than the dish it accompanies.

Finish with a sizzling tempering: mustard seeds, curry leaves and dried red chilies poured over the top; stir in only at serving.
Chef's tip
Resting the finished dish for five minutes off the heat lets the spices settle and deepen.
