
Chintakaya Pachadi
Raw tamarind chutney, sour to the point of joy. Small bowl, big personality. Spoon alongside breakfast or stir through hot rice with ghee.
Ingredients
- Saltto taste
- Onion2, finely sliced
- Green Chili2
- Mustard Seeds1 tsp
- Curry Leaves1 sprig
- Dried Red Chilies2
- Asafoetidaa pinch
- Tamarind Paste2 tbsp
- Roasted Cumin1 tsp
- Coconut Oil1 tbsp

Chop, measure and line up; the cooking part is over before the radio finishes a song.

If the recipe roasts, dry-roast the onion till aromatic; if fresh, skip straight to grinding.

Pound or blend the tamarind paste with chilies, tamarind and salt; the stone grinder texture is worth chasing.

Taste and adjust — salt, sour, heat; chutney should be slightly louder than the dish it accompanies.

Finish with a sizzling tempering: mustard seeds, curry leaves and dried red chilies poured over the top; stir in only at serving.
Chef's tip
A final squeeze of lemon or lime right before serving wakes up every other flavour.
