Guntur Chicken
Guntur chicken, chilli-country fire tempered only by curry leaves. The Sunday-special format that every region does differently. Best with steamed rice and a cooling raita.
Ingredients
- Chicken500 g, bone-in pieces
- Ginger Garlic Paste2 tbsp
- Garam Masala1 tsp
- Saltto taste
- Onion3, finely sliced
- Tomato2, chopped
- Garlic6 cloves
- Green Chili2, slit
- Coriander Powder2 tsp
- Turmeric Powder1/2 tsp
- Vegetable Oil3 tbsp
- Curry Leaves2 sprigs
- Dried Red Chilies1 tsp
- Red Chili Powder1-2 tsp
Optional extras
- Kasuri Methi1 tsp
- Fresh Cilantro2 tbsp, chopped

Season the chicken with salt and the ground spices, rub in ginger garlic paste, and let it sit while you build the rest.

Brown the onions properly in hot oil, eight to ten minutes, till bronze and sweet.

Stir in the paste and green chilies, then tomato and spices, frying till the masala darkens and splits.

Turn the chicken through the masala with the dried red chilies, let it sear, then pour in warm water and cover.

Reduce to your preferred consistency, rest five minutes, and finish with the garlic and cilantro.
Chef's tip
Don't crowd the pan; steam is the enemy of the browning that builds flavour.
