Kakori kebabs so soft they were invented to win a complaining poet. The smell alone sells the dish. Best hot off the grill with cold lassi.

Ingredients
- Ginger Garlic Paste1 tbsp
- Garam Masala1 tsp
- Saltto taste
- Green Chili2
- Vegetable Oil2 tbsp
- Lemon1
- Cashews1/4 cup
- Ground Lamb500 g
- Green Cardamom1 tsp
- Poppy Seeds1 tsp
Optional extras
- Fresh Cilantro2 tbsp, chopped
- Chaat Masala1 tsp
Instructions

Combine the ground lamb with the poppy seeds and seasonings; cover and let the fridge do the tenderising.

Soak the skewers, warm the grill, and set a rack close to the heat.

Let the marinade drip off; wet surfaces steam instead of char.

Grill till the edges catch and blacken slightly — that char is the flavour.

Rest five minutes, squeeze fresh lemon over, shower with chaat masala and serve with sliced onions and green chutney.

Pat the meat dry before marinating or the char suffers.
