Champaran Mutton
Bihar's handi-sealed Champaran mutton, garlic-heavy and slow. Mutton rewards patience with a gravy you'll dream about. Best with ghee rice and a sharp onion-lemon salad.
Ingredients
- Yogurt1/2 cup, whisked
- Ginger Garlic Paste2 tbsp
- Garam Masala1 tsp
- Saltto taste
- Onion2, finely sliced
- Tomato2, chopped
- Garlic6 cloves
- Coriander Powder2 tsp
- Turmeric Powder1 tsp
- Whole Garam Masala Spices2 tsp
- Bay Leaf2
- Mutton500 g, on the bone
- Red Chili Powder2 tsp
- Mustard Oil1 tsp
Optional extras
- Fresh Cilantro2 tbsp, chopped
Instructions
- 1
Wash the mutton and marinate with the garlic, yogurt, ginger garlic paste, salt and chili for at least two hours.
- 2
Smoke-point the oil, add whole spices, and let them darken a shade — the base of everything.
- 3
Fry the onions till deep brown — properly brown, ten to twelve minutes; this sweetness carries the curry.
- 4
Add the marinated mutton and sear on high, turning, till no pink remains; then add hot water to cover and bring to a simmer.
- 5
Simmer covered till fork-tender, stirring now and then, then boil open to reduce; finish with the onion and garam masala.
Chef's tip
Don't crowd the pan; steam is the enemy of the browning that builds flavour.
