
Peshawari Kebab
Peshawari kebabs, just meat, pepper and courage. Marinated deep and grilled hard; kebabs are patience rewarded. Classic plate: kebabs, laccha pyaaz, mint chutney, naan.
Ingredients
- Ginger Garlic Paste1 tbsp
- Garam Masala1 tsp
- Saltto taste
- Green Chili2
- Ghee3 tbsp
- Vegetable Oil2 tbsp
- Lemon1
- Ground Lamb500 g
- Black Pepper1 tsp
Optional extras
- Fresh Cilantro2 tbsp, chopped
- Chaat Masala1 tsp
Instructions

Marinate the ground lamb with the black pepper, ginger garlic paste, spices and lemon; refrigerate at least two hours, overnight is better.

Prepare the skewers and the grill or oven — high heat, clean grates.

Let the marinade drip off; wet surfaces steam instead of char.

Cook over strong heat, turning four times, till charred in patches and just cooked through.

Rest five minutes, squeeze fresh lemon over, shower with chaat masala and serve with sliced onions and green chutney.
Chef's tip
Pat the meat dry before marinating or the char suffers.
