Flat chapli kebabs fried in a pond of fat, pomegranate-seed crunch inside. Smoke, char and spice — the tandoor tradition, any way you can manage it. Serve with green chutney, onion rings and lemon.

Ingredients

  • Ginger Garlic Paste1 tbsp
  • Garam Masala1 tsp
  • Saltto taste
  • Tomato3, chopped
  • Green Chili2
  • Vegetable Oil2 tbsp
  • Lemon1
  • Pomegranate Seeds1/2 cup
  • Ground Lamb500 g

Optional extras

  • Fresh Cilantro2 tbsp, chopped
  • Chaat Masala1 tsp

Instructions

    Combine the ground lamb with the tomato and seasonings; cover and let the fridge do the tenderising.

    Soak the skewers, warm the grill, and set a rack close to the heat.

    Take the skewers out of the fridge 30 minutes ahead — even cooking starts here.

    Cook over strong heat, turning four times, till charred in patches and just cooked through.

    Rest five minutes, squeeze fresh lemon over, shower with chaat masala and serve with sliced onions and green chutney.

Chef's tip

Resting the finished dish for five minutes off the heat lets the spices settle and deepen.
