
Bihari Kebab
Bihari kebabs, mustard-oil marinated and charred fierce. Smoke, char and spice — the tandoor tradition, any way you can manage it. Serve with green chutney, onion rings and lemon.
Ingredients
- Ginger Garlic Paste1 tbsp
- Garam Masala1 tsp
- Saltto taste
- Green Chili2
- Vegetable Oil2 tbsp
- Lemon1
- Ajwain1 tsp
- Mustard Oil1 tsp
- Ground Lamb500 g
Optional extras
- Fresh Cilantro2 tbsp, chopped
- Chaat Masala1 tsp
Instructions

Work the marinade into the ground lamb with the mustard oil — massage it like you mean it — and chill for hours, not minutes.

Soak the skewers, warm the grill, and set a rack close to the heat.

Let the marinade drip off; wet surfaces steam instead of char.

Grill hot and fast, turning every few minutes, basting with the leftover marinade or melted butter.

Rest, then finish with lemon, chaat masala and the green chili; serve with onion rings and mint chutney.

Resting the finished dish for five minutes off the heat lets the spices settle and deepen.
