Dhaba egg curry, charred masala and halved eggs. Cheap, fast and genuinely great. Plate with paratha and sliced onions for breakfast.

Ingredients
- Ginger Garlic Paste1 tbsp
- Garam Masala1/2 tsp
- Saltto taste
- Onion2, finely sliced
- Tomato3, chopped
- Green Chili1-2
- Turmeric Powder1/2 tsp
- Vegetable Oil2 tbsp
- Eggs4
- Red Chili Powder1 tsp
Optional extras
- Fresh Cilantro2 tbsp, chopped
Instructions

Hard-boil the eggs (or beat them, for omelette-style), peel and halve; a light dusting of turmeric and salt helps them fry without spitting.

Golden the eggs in hot oil — those blistery patches carry flavour.

Soften the onions, add the paste and tomato, and cook the spices until the oil rises.

Return the eggs with the onion, spoon the masala over, and let it all bubble together briefly.

Rest two minutes, dust with the tomato, and serve.
