
Egg Butter Masala
Egg butter masala, boiled eggs in the makhani gravy everyone loves. Cheap, fast and genuinely great. Plate with paratha and sliced onions for breakfast.
Ingredients
- Ginger Garlic Paste1 tbsp
- Garam Masala1/2 tsp
- Butter3 tbsp
- Tomato Puree400 g
- Saltto taste
- Onion2, finely chopped
- Tomato2, chopped
- Green Chili1-2
- Turmeric Powder1/2 tsp
- Vegetable Oil2 tbsp
- Eggs4
- Cashews1/4 cup
- Red Chili Powder1 tsp
Optional extras
- Fresh Cilantro2 tbsp, chopped
Instructions

Boil the eggs exactly nine minutes, cool, peel, and score lightly so the masala can find its way in.

Golden the eggs in hot oil — those blistery patches carry flavour.

Build the masala: onions down till gold, paste and tomato in, spices fried till thick and split.

Slide the eggs into the gravy with the butter and warm them through — five minutes, no more.

Rest two minutes, dust with the tomato puree, and serve.

Fresh spices make the dish — if yours smell of nothing, the dish will taste of nothing.
