Kerala squid roast, pepper-hot with shallot sweetness. Coastal simplicity: good catch, bold spice, quick fire. Best eaten immediately, ideally outdoors.

Ingredients
- Saltto taste
- Onion1, finely chopped
- Garlic4 cloves
- Ginger1 tbsp, minced
- Green Chili2
- Turmeric Powder1/2 tsp
- Vegetable Oil2 tbsp
- Curry Leaves2 sprigs
- Lemon1
- Shallots10, halved
- Red Chili Powder1 tsp
- Squid400 g, cleaned and ringed
- Black Pepper1 tsp
Instructions

Clean the squid carefully — shell, devein or scrub as needed — and pat completely dry.

Soften the onion and garlic in hot oil till the rawness is gone.

Stir in the black pepper with the ground spices and let them sizzle and darken slightly.

Add the squid and toss on high heat just till it changes colour and turns opaque.

Finish off the heat with lemon, cilantro and a knob of butter if you like; serve immediately.
Chef's tip
Lemon at the very end, off the heat, always.
