Sali Per Eedu
Parsi eggs on crisp potato straws, breakfast theatre. Eggs, upgraded: fried, spiced and simmered in proper masala. Plate with paratha and sliced onions for breakfast.
Ingredients
- Ginger Garlic Paste1 tbsp
- Garam Masala1/2 tsp
- Saltto taste
- Onion2, finely chopped
- Tomato3, chopped
- Green Chili2
- Turmeric Powder1/2 tsp
- Vegetable Oil2 tbsp
- Potato3 medium, cubed
- Eggs4
- Red Chili Powder1 tsp
Optional extras
- Fresh Cilantro2 tbsp, chopped

Hard-boil the eggs (or beat them, for omelette-style), peel and halve; a light dusting of turmeric and salt helps them fry without spitting.

Shallow-fry the eggs till blistered gold in patches; set aside.

Build the masala: onions down till gold, paste and tomato in, spices fried till thick and split.

Slide the eggs into the gravy with the potato and warm them through — five minutes, no more.

Finish with garam masala, cilantro and lemon; serve hot with roti, rice or buttered toast.
