
Muttai Thokku
Tamil egg thokku, dry masala paste for travel lunchboxes. The protein hero of Indian home cooking, treated right. Serve with rotis, steamed rice or hot buttered toast.
Ingredients
- Ginger Garlic Paste1 tbsp
- Garam Masala1/2 tsp
- Saltto taste
- Onion2, finely chopped
- Tomato3, chopped
- Ginger2-inch piece
- Green Chili1-2
- Turmeric Powder1/2 tsp
- Vegetable Oil2 tbsp
- Eggs4
- Sesame Oil1 tsp
- Red Chili Powder1 tsp
Optional extras
- Fresh Cilantro2 tbsp, chopped
Instructions

Hard-boil the eggs (or beat them, for omelette-style), peel and halve; a light dusting of turmeric and salt helps them fry without spitting.

Shallow-fry the eggs till blistered gold in patches; set aside.

Build the masala: onions down till gold, paste and tomato in, spices fried till thick and split.

Return the eggs with the tomato, spoon the masala over, and let it all bubble together briefly.

Finish with garam masala, cilantro and lemon; serve hot with roti, rice or buttered toast.
Chef's tip
Resting the finished dish for five minutes off the heat lets the spices settle and deepen.
