
Masala Egg Toast
Egg-battered toast fried in butter, the hostel breakfast of legends. Eggs, upgraded: fried, spiced and simmered in proper masala. Plate with paratha and sliced onions for breakfast.
Ingredients
- Ginger Garlic Paste1 tbsp
- Garam Masala1/2 tsp
- Butter3 tbsp
- Saltto taste
- Onion2, finely chopped
- Tomato2, chopped
- Green Chili2
- Turmeric Powder1/2 tsp
- Vegetable Oil2 tbsp
- Eggs4
- Red Chili Powder1 tsp
- Bread4 slices
Optional extras
- Fresh Cilantro2 tbsp, chopped
Instructions

Boil the eggs exactly nine minutes, cool, peel, and score lightly so the masala can find its way in.

Fry the eggs in a little oil till the surfaces take on colour and crisp.

Soften the onions, add the paste and tomato, and cook the spices until the oil rises.

Slide the eggs into the gravy with the bread and warm them through — five minutes, no more.

Rest two minutes, dust with the green chili, and serve.
Chef's tip
Scoring the boiled eggs lets the masala get in.
