
Kela Aur Nariyal ki Bhaaji
Raw banana with coconut and mustard crackle, the simple Tamil poriyal for rice plates. A one-pan weeknight sabzi that asks for little and gives a lot. Best mopped up with hot chapatis straight off the flame.
Ingredients
- Ginger Garlic Paste1 tbsp
- Garam Masala1/2 tsp
- Saltto taste
- Onion1, finely chopped
- Tomato2, chopped
- Green Chili1-2, slit
- Cumin Seeds1 tsp
- Coriander Powder1 tsp
- Turmeric Powder1/2 tsp
- Vegetable Oil2 tbsp
- Mustard Seeds1 tsp
- Curry Leaves2 sprigs
- Red Chili Powder1 tsp
- Green Banana2, boiled and peeled
- Grated Coconut1 cup
Optional extras
- Fresh Cilantro2 tbsp, chopped
Instructions

Dice the green banana uniformly, toss with a pinch of salt and let it sit while the masala comes together.

Soften the onions in oil over a medium flame with a little salt until translucent and sweet.

Add ginger garlic paste, cook out the raw smell, then bloom the turmeric, chili and coriander in the oil.

Turn the green banana through the masala with the grated coconut, clamp on a lid and let the steam work — check after 10 minutes.

Uncover, raise the heat for two minutes to dry off any liquid, then shower with cilantro and a squeeze of lemon.
Chef's tip
Roasted peanut powder stirred in at the end adds body without cream.
