
Palak Aur Matar ki Bhaaji
Spinach and green peas with a ginger hit, the simple winter bhaaji of Delhi kitchens. The kind of homely bhaji that disappears fastest off the thali. Serve hot with rotis, dal and a wedge of lemon.
Ingredients
- Ginger Garlic Paste1 tbsp
- Garam Masala1/2 tsp
- Saltto taste
- Spinach300 g, chopped
- Onion1, finely chopped
- Tomato2, chopped
- Ginger2-inch piece
- Green Chili1-2, slit
- Cumin Seeds1 tsp
- Ghee3 tbsp
- Coriander Powder1 tsp
- Turmeric Powder1/2 tsp
- Vegetable Oil2 tbsp
- Green Peas1 cup
- Red Chili Powder1 tsp
Optional extras
- Fresh Cilantro2 tbsp, chopped

Wash and cut the spinach into even, bite-size pieces so everything cooks at the same pace.

Warm the oil, add cumin and a pinch of asafoetida, then the onions — cook till bronzed at the edges.

Stir in ginger garlic paste and green chili; after a minute add the ground spices with a splash of water so they don't scorch.

Turn the spinach through the masala with the green peas, clamp on a lid and let the steam work — check after 10 minutes.

Finish with garam masala, cilantro and a knob of butter for gloss.
Chef's tip
If the masala sticks, add water a tablespoon at a time rather than drowning the dish.
