
Sukhi Arbi Aur Matar
Taro and peas tossed with ajwain and amchur, crisp outside fluffy inside. A one-pan weeknight sabzi that asks for little and gives a lot. Best mopped up with hot chapatis straight off the flame.
Ingredients
- Ginger Garlic Paste1 tbsp
- Garam Masala1/2 tsp
- Saltto taste
- Onion1, finely chopped
- Tomato2, chopped
- Green Chili1-2, slit
- Cumin Seeds1 tsp
- Coriander Powder1 tsp
- Turmeric Powder1/2 tsp
- Vegetable Oil2 tbsp
- Green Peas1 cup
- Ajwain1 tsp
- Red Chili Powder1 tsp
- Taro (Arbi)300 g, boiled and peeled
- Amchur (Dry Mango Powder)1 tsp
Optional extras
- Fresh Cilantro2 tbsp, chopped

Dice the taro (arbi) uniformly, toss with a pinch of salt and let it sit while the masala comes together.

Heat oil in a wide kadhai and crackle cumin seeds; fry the onions till lightly golden.

Tip in the ginger garlic paste and green chilies, then the spices — fry until the oil separates at the edges.

Add the taro (arbi) and the green peas, toss to coat in the masala, cover and cook on low, stirring twice, until tender.

Uncover, raise the heat for two minutes to dry off any liquid, then shower with cilantro and a squeeze of lemon.

Don't crowd the pan; steam is the enemy of the browning that builds flavour.
