Bhindi Aur Pyaz ki Bhurji
Okra scrambled fine with onions and kasuri methi, the bhurji-style bhindi of UP homes. Simple, spiced straight-talk food — no gravy to hide behind. Pile beside phulka and a bowl of cooled yogurt.
Ingredients
- Ginger Garlic Paste1 tbsp
- Garam Masala1/2 tsp
- Kasuri Methi1 tbsp
- Saltto taste
- Onion2, finely sliced
- Tomato2, chopped
- Green Chili1-2, slit
- Cumin Seeds1 tsp
- Coriander Powder1 tsp
- Turmeric Powder1/2 tsp
- Vegetable Oil2 tbsp
- Lemon1
- Okra250 g, topped and tailed
- Red Chili Powder1 tsp
Optional extras
- Fresh Cilantro2 tbsp, chopped
Instructions

Dice the okra uniformly, toss with a pinch of salt and let it sit while the masala comes together.

Soften the onions in oil over a medium flame with a little salt until translucent and sweet.

Stir in ginger garlic paste and green chili; after a minute add the ground spices with a splash of water so they don't scorch.

Add the okra and the onion, toss to coat in the masala, cover and cook on low, stirring twice, until tender.

Kill the heat, stir through the cilantro and the kasuri methi, and rest five minutes before serving.
Chef's tip
Cover and cook on low — high heat toughens vegetables before they soften.
