
Lauki Aur Chana Dal ki Bhaaji
Bottle gourd and chana dal sweetened faintly with jaggery, the Gujarati dudhi chana dal. The kind of homely bhaji that disappears fastest off the thali. Serve hot with rotis, dal and a wedge of lemon.
Ingredients
- Ginger Garlic Paste1 tbsp
- Garam Masala1/2 tsp
- Saltto taste
- Onion1, finely chopped
- Tomato2, chopped
- Ginger2-inch piece
- Green Chili1-2, slit
- Cumin Seeds1 tsp
- Chickpeas1 cup, soaked overnight
- Coriander Powder1 tsp
- Turmeric Powder1/2 tsp
- Vegetable Oil2 tbsp
- Red Chili Powder1 tsp
- Jaggery3/4 cup, grated
- Bottle Gourd2 cups, cubed
Optional extras
- Fresh Cilantro2 tbsp, chopped
Instructions

Dice the bottle gourd uniformly, toss with a pinch of salt and let it sit while the masala comes together.

Heat oil in a wide kadhai and crackle cumin seeds; fry the onions till lightly golden.

Stir in ginger garlic paste and green chili; after a minute add the ground spices with a splash of water so they don't scorch.

Fold in the bottle gourd with the chickpeas, sprinkle in a tablespoon of water, cover and steam until just done.

Finish with garam masala, cilantro and a knob of butter for gloss.
Chef's tip
A final squeeze of lemon or lime right before serving wakes up every other flavour.
