
Phirni Aur Rose
Kashmiri phirni ground rice pudding in clay bowls, the Eid standard. Festival sweetness, made the slow way. Serve at room temperature, cut small — sweetness needs no size.
Ingredients

- Rice3/4 cup
- Milk1 litre
- Sugarto taste
- Green Cardamom4, ground
- Rose Water1 tsp
- Pistachios1/2 cup, chopped

Measure everything before lighting the flame; there is no pause button mid-cook.

Combine the rice with the milk in a heavy-bottomed pan and begin cooking over medium heat, stirring constantly.

Stir through the long middle stage until the mixture looks cohesive and smells toasty and rich.

Season the mix with the rose water and green cardamom, reserving some nuts for the top.

Spread or shape while warm, garnish with the reserved nuts, cool completely, then cut or serve as it sets.
Chef's tip
A final squeeze of lemon or lime right before serving wakes up every other flavour.
