Malpua Aur Rabri
Fried malpua pancakes drowned in rabri, the Holi sweet of Banaras ghats. The taste of every good news day in an Indian household. Serve at room temperature, cut small — sweetness needs no size.
Ingredients
- Salta pinch
- Ghee3 tbsp
- Saffrona pinch, soaked in warm milk
- Milk1 litre
- All-Purpose Flour2 cups
- Sugar1 tsp
- Green Cardamom4, ground
Instructions
- 1
Set out every ingredient measured and ready; Indian sweets move fast once the heat is on.
- 2
Start the base: the all-purpose flour and milk together in a thick pan, stirring so nothing catches.
- 3
Keep going until the mass pulls away from the pan and glistens; the colour should deepen a shade.
- 4
Stir in the sugar with the cardamom; the aroma should bloom immediately.
- 5
Spread or shape while warm, garnish with the reserved nuts, cool completely, then cut or serve as it sets.
Chef's tip
A heavy pan is the difference between toasty and burnt.
