Kalakand Aur Kesar
Milk-burfi kalakand with grainy texture, the Alwar sweet that travels badly and tastes perfect. Festival sweetness, made the slow way. Serve at room temperature, cut small — sweetness needs no size.
Ingredients
- Salta pinch
- Ghee3 tbsp
- Saffrona pinch, soaked in warm milk
- Sugar1 tsp
- Green Cardamom4, ground
- Khoa (Mawa)200 g
- Pistachios1/2 cup, chopped
Instructions
- 1
Set out every ingredient measured and ready; Indian sweets move fast once the heat is on.
- 2
Put the khoa (mawa) and sugar on a steady medium flame and commit to stirring — sweets test your patience.
- 3
Keep going until the mass pulls away from the pan and glistens; the colour should deepen a shade.
- 4
Add the saffron, cardamom and any nuts or saffron; fold through and cook two minutes more.
- 5
Tip into a greased tray, level the top, sprinkle nuts, and let it set before cutting into diamonds.
Chef's tip
If the masala sticks, add water a tablespoon at a time rather than drowning the dish.
