
Anarsa Aur Poppy Seeds
Maharashtrian anarsa with poppy-seed crust, the Diwali faral heirloom. The taste of every good news day in an Indian household. Serve at room temperature, cut small — sweetness needs no size.

- Rice Flour1 cup
- Jaggery3/4 cup, grated
- Green Cardamom4, ground
- Poppy Seeds1 tsp

Set out every ingredient measured and ready; Indian sweets move fast once the heat is on.

Put the rice flour and jaggery on a steady medium flame and commit to stirring — sweets test your patience.

Stir through the long middle stage until the mixture looks cohesive and smells toasty and rich.

Add the poppy seeds, cardamom and any nuts or saffron; fold through and cook two minutes more.

Spread or shape while warm, garnish with the reserved nuts, cool completely, then cut or serve as it sets.
