
Egg Keema Masala
Egg and keema masala, the Mughlai hybrid of Hyderabad canteens. The protein hero of Indian home cooking, treated right. Serve with rotis, steamed rice or hot buttered toast.
Ingredients
- Ginger Garlic Paste1 tbsp
- Garam Masala1/2 tsp
- Saltto taste
- Onion2, finely sliced
- Tomato2, chopped
- Green Chili1-2
- Turmeric Powder1/2 tsp
- Vegetable Oil2 tbsp
- Green Peas1 cup
- Eggs4
- Ground Beef500 g
- Red Chili Powder1 tsp
Optional extras
- Fresh Cilantro2 tbsp, chopped
Instructions

Prep the eggs — boiled, peeled and pricked all over with a fork.

Fry the eggs in a little oil till the surfaces take on colour and crisp.

Soften the onions, add the paste and tomato, and cook the spices until the oil rises.

Return the eggs with the ground beef, spoon the masala over, and let it all bubble together briefly.

Scatter the onion, cilantro and a squeeze of lemon over the top.
Chef's tip
A final squeeze of lemon or lime right before serving wakes up every other flavour.
