
Coconut Ice Cream
Two-ingredient coconut ice cream, the vegan scoop that tastes like a beach holiday. A proper small-batch scoop that melts slowly and cleanly. Serve in chilled bowls or cones straight from the freezer.

- Milk1 cup
- Sugar1 tsp
- Lime2
- Coconut Milk1 cup
- Vanilla Extract1 tsp
- Grated Coconut1 cup

If using an ice cream maker, freeze the bowl a full day ahead and chill the custard base overnight.

Combine the sugar with the grated coconut, stirring until no grains remain, then chill the base.

Blend in the coconut milk — taste again; the frozen version will be less sweet and less intense than this.

Churn in the ice cream maker until thick and soft-serve texture, 20-25 minutes.

Ripen in the freezer overnight for the cleanest scoops.
