Strawberry Ice Cream
Roasted-strawberry base for real fruit flavour, no pink additives. Cold, creamy and scoopable — no ice crystals, no apologies. Keeps a week in the freezer — surface it with parchment between sessions.
Ingredients
- Heavy Cream1/4 cup
- Salta pinch
- Milk1 litre
- Sugar1 tsp
- Vanilla Extract1 tsp
- Strawberries2 cups, hulled and sliced

Get everything cold: the base, the churn bowl, even the container you will freeze it in.

Combine the sugar with the milk, stirring until no grains remain, then chill the base.

Add the strawberries to the cold mixture and churn-ready taste: it should taste slightly too strong.

Churn in the ice cream maker until thick and soft-serve texture, 20-25 minutes.

Transfer to a container, press a sheet of parchment on the surface, and freeze four hours until scoopable.
Chef's tip
Weigh your flour if you can; cup measures can be off by twenty percent either way.
