Strawberry Frozen Yogurt
Tart frozen yogurt blitzed with strawberries, the soft-serve of the fitness-conscious. Cold, creamy and scoopable — no ice crystals, no apologies. Keeps a week in the freezer — surface it with parchment between sessions.
Ingredients
- Yogurt2 cups, whisked
- Salta pinch
- Lemon1
- Milk1 cup
- Sugar1 tsp
- Vanilla Extract1 tsp
- Strawberries2 cups, hulled and sliced
Instructions
- 1
Get everything cold: the base, the churn bowl, even the container you will freeze it in.
- 2
Dissolve the sugar into the base — warm gently for custard styles, just stir for fruit bases.
- 3
Stir or blend the strawberries through the chilled base until smooth and evenly flavoured.
- 4
Churn in the ice cream maker until thick and soft-serve texture, 20-25 minutes.
- 5
Freeze solid for at least four hours, then let it sit five minutes at room temperature before scooping.
Chef's tip
Room-temperature ingredients blend smoother — pull the dairy and eggs out of the fridge an hour ahead.
