Orange Creamsicle Pops
Orange juice and vanilla cream layered in popsicle moulds, the summer-van memory. Cold, creamy and scoopable — no ice crystals, no apologies. Keeps a week in the freezer — surface it with parchment between sessions.
Ingredients
- Heavy Cream1/4 cup
- Salta pinch
- Milk1 cup
- Sugar1 tsp
- Vanilla Extract1 cup, chopped
- Orange2, zested and juiced
Instructions
- 1
If using an ice cream maker, freeze the bowl a full day ahead and chill the custard base overnight.
- 2
Stir the sugar with the sugar until dissolved; the finished scoop should taste slightly too strong now.
- 3
Blend in the orange — taste again; the frozen version will be less sweet and less intense than this.
- 4
Freeze in a shallow tray, scraping and stirring vigorously every 30 minutes, three or four rounds, if churning by hand.
- 5
Ripen in the freezer overnight for the cleanest scoops.
Chef's tip
Room-temperature ingredients blend smoother — pull the dairy and eggs out of the fridge an hour ahead.
