
Berry Filo Turnovers
Filo cups of bubbling berries with honey drizzle, the lighter turnover. Golden-crusted and generous, with clean slices and no sogginess. Serve warm with cream, custard or a scoop of ice cream.
Ingredients
- Butter1/2 cup, cold
- Honey2 tbsp
- Salt1/2 tsp
- All-Purpose Flour2 cups
- Sugar2 tbsp
- Blueberries2 cups, chopped
- Phyllo Dough1 cup, chopped
- Lemon Zest1 tbsp

Keep everything cold — the butter, the water, even the bowl — that is the whole secret of pastry.

Cut the cold butter through the flour, drizzle in ice water, and gather the dough without kneading.

Chill the wrapped dough thirty minutes to an hour while you prepare the blueberries.

Work the blueberries and phyllo dough into the dough, folding gently for even distribution.

Bake until the crust is browned and the filling bubbles at the vents, 35-50 minutes, then rest twenty minutes.
Chef's tip
With butter-based batters, cream until the mixture actually lightens in colour; that trapped air is your rise.
