
Danish Butter Cookies
Pipeable butter cookies in the blue-tin shapes, the gift-box classic. Flaky, buttery pastry around a filling that actually tastes of the season. Serve warm with cream, custard or a scoop of ice cream.
Ingredients

- Salt1/2 tsp
- All-Purpose Flour2 cups
- Sugar1 tsp
- Vanilla Extract1 cup, chopped

Cube the cold butter and return it to the fridge while you measure the rest.

Cut the cold butter through the flour, drizzle in ice water, and gather the dough without kneading.

Rest the dough, wrapped, in the fridge for at least thirty minutes — relaxed dough will not shrink.

Layer in the butter with the all-purpose flour so every slice gets a full cross-section.

Bake hot until the pastry is bronzed and crisp; a cooling spell keeps the filling from running.
Chef's tip
Resting a custard or pudding overnight deepens the flavour and sets a cleaner slice.
