
Cinnamon Walnut Rugelach
Cream-cheese dough rolled with cinnamon-walnut sugar, the Jewish bakery crescent. Rustic, crisp-edged and comforting — the dessert that empties the table quietly. Serve warm with cream, custard or a scoop of ice cream.

Keep everything cold — the butter, the water, even the bowl — that is the whole secret of pastry.

Cut the cold butter through the flour, drizzle in ice water, and gather the dough without kneading.

Chill the wrapped dough thirty minutes to an hour while you prepare the cream cheese.

Layer in the cream cheese with the walnuts so every slice gets a full cross-section.

Bake at 190 C / 375 F for 35-45 minutes until deeply golden and bubbling; cool before slicing so the filling sets.
Chef's tip
Weigh your flour if you can; cup measures can be off by twenty percent either way.
