Coconut Jam Hearts
Coconut-jam thumbprint pastries, the bakery-regular of tropical counters. Rustic, crisp-edged and comforting — the dessert that empties the table quietly. Serve warm with cream, custard or a scoop of ice cream.
Ingredients
- Butter3 tbsp
- Salt1/2 tsp
- All-Purpose Flour2 cups
- Sugar1 tsp
- Shortcrust Pastry1 cup, chopped
- Grated Coconut1 cup
Instructions
- 1
Cube the cold butter and return it to the fridge while you measure the rest.
- 2
Toss the butter through the flour, add just enough cold water to hold, and press into a disc.
- 3
Chill the wrapped dough thirty minutes to an hour while you prepare the grated coconut.
- 4
Work the grated coconut and shortcrust pastry into the dough, folding gently for even distribution.
- 5
Bake hot until the pastry is bronzed and crisp; a cooling spell keeps the filling from running.
Chef's tip
Salt is the missing ingredient in most home desserts — a small pinch makes chocolate and caramel taste more like themselves.
