Ingredients
- Ginger Garlic Paste1 tbsp
- Garam Masala1/2 tsp
- Saltto taste
- Spinach200 g
- Turmeric Powder1/2 tsp
- Potato2
- Green Peas1/2 cup
- Chaat Masala1 tsp
- Red Chili Powder1 tsp
Optional extras
- Mint Leavesfor the hari chutney
- Fresh Cilantrofor the hari chutney
- Tamarind Paste2 tbsp, for the meethi chutney
- Jaggery1 tbsp, for the meethi chutney

Mash the base with the spices and enough binding to hold a shape.

Form patties and shallow-fry 3-4 minutes a side until crusty and deep gold.

Plate up: tikki, then yogurt, meethi chutney, hari chutney, and a snowfall of crushed peanuts.

Eat immediately — a tikki waits for no one.
