Karnataka's ring-shaped snack with a coconut-warm kick, twisted from rice dough into perfect bangles. Named for its shape — kodubale means bangle — and loved for its addictive bite.

Ingredients

  • Salt1.25 tsp
  • Green Chili3
  • Curry Leaves8
  • Asafoetida1/4 tsp
  • Peanut Oilfor deep frying
  • Rice Flour2 cups
  • Chickpea Flour1/4 cup
  • Grated Coconut2 tbsp

Instructions

    Grind coconut, green chilies and curry leaves to a coarse paste.

    Mix rice flour, chickpea flour, the paste, asafoetida and salt.

    Knead with enough water into a soft, pliable dough.

    Roll ropes and join ends into rings.

  5. 5

    Deep fry on medium till evenly golden and crisp.

Chef's tip

Ropes should be pencil-thin; fat rings stay raw inside and soften when stored.
