Bengal's fried answer to the rasgulla — khoya-and-flour spheres deep fried till dark, drowned in cardamom syrup till they swell and glisten. Pantua is the proud ancestor of the gulab jamun.

Ingredients

  • All-Purpose Flour1/4 cup
  • Sugar1.5 cups, for syrup
  • Peanut Oilfor deep frying
  • Green Cardamom4, powdered
  • Khoa (Mawa)1 cup, crumbled

Instructions

    Mash khoya with flour to a smooth, crack-free dough.

    Roll tight smooth balls — no cracks allowed.

    Fry on medium till mahogany dark all over.

  4. 4

    Drop into warm cardamom syrup.

    Soak 2 hours until each ball swells heavy with syrup.

Chef's tip

Cracked balls burst in the oil — knead till the dough is silk, then roll twice-smooth.
