Ingredients

  • Ghee3 tbsp, divided
  • All-Purpose Flour2 cups
  • Sugar1 cup, for syrup
  • Peanut Oilfor deep frying
  • Green Cardamom3, powdered

  • Salt1 pinch

Instructions

    Knead maida with ghee into a firm dough; rest 30 minutes.

    Roll thin, smear ghee, fold into many layers; repeat.

    Cut into rectangles and press flat.

    Fry on medium till pale gold and layered.

  5. 5

    Dip in thin warm syrup briefly; dry till the coating sets glassy.

Chef's tip

A quick hot dip only — long soaking makes khaja soggy, and khaja must crackle.
