Chandrakala's domed twin — a puffed sun-round pastry hiding khoya, raisins and nuts under a syrup sheen. Where there are Chandrakala on a wedding tray, Suryakala sit beside them by law.

Ingredients
- Ghee2 tbsp
- All-Purpose Flour1.5 cups
- Sugar1 cup, for syrup
- Cashews2 tbsp, chopped
- Peanut Oilfor deep frying
- Golden Raisins1 tbsp
- Green Cardamom4, powdered
- Khoa (Mawa)3/4 cup, roasted
Instructions

Knead maida-ghee pastry dough; rest 30 minutes.

Prepare khoya filling with raisins, nuts and cardamom.

Fill round puris and gather into a domed pouch, pinching pleats closed.

Fry on low till gold and fully puffed.

Glaze in syrup and dry on a rack.
Chef's tip
Pleat the dome well and tuck the tip under — an open pouch is a ruined Suryakala.
